Kakadichi Koshimbir / Maharashtrian Cucumber Salad


Indian salads are differentiated by addition of yogurt.  They are usually called as raita, koshimbir etc as per region they belong. 


The Maharashtrian salad or koshimbir, is distinguished by the addition of roasted peanut powder. Some people consider kakadi/cucumber as fasting(vrat) food. Kakadichi koshimbir is quick and easy to make with just cucumber, yogurt and some spices.

Time: 5 minutes

Serve: 2

Ingredients:

1-2 cucumber

1 cup yogurt
1 tsp roasted cumin seed powder
4-5 tsp roasted peanut powder

1 tbsp coriander leaves(finely chopped)
1 tsp sugar
salt to taste

Method:

  1. Remove skin of cucumber. Finely chop cucumber.
  2. In bowl, mix all ingredients well.
  3. Leave in fridge to cool for sometime.(optional)
  4. Serve with chapati/roti/paratha, curry and rice.
