Microwaved Spicy & Sour Masala Peanuts

Masala Peanuts are usually deep fried but this one is microwaved. It is good low fat snack, goes very well with tea/coffee.



Shelf life: 1-2 weeks
Time: 15 mins

Yield: 2 cups

Ingredients:


1 cup Peanuts
1 cup Chickpeas flour
1 tsp Roasted Cumin Seed Powder
1 tsp Coriander Seed Powder
1 tsp Garam Masala
a pinch of Asafoetida
1-2 tsp Red chili Powder
1/2 tsp Turmeric Powder
2-3 tbsp Lemon Juice
1/4 cup Water,approximately
2 tbsp Oil
Salt to taste


Method:
1. In a bowl add all ingredients expect water and mix everything nicely.

2. Now slowly add water and mix nicely. Batter should be to thick enough coat peanuts evenly.

3. Cut a wax paper or parchment paper as a size of the glass plate in Microwave.


4. For every batch, drop the peanuts into small clusters(2-3 peanuts) leaving some space in between them.

5. Microwave it on HIGH for 2 minutes and keep an eye after 1 1/2 mins so that they would not burn. Check by tasting, if not done microwave again for 1 minute.

6. Remove the peanuts from wax paper. Keep aside. 

7. Repeat the same process for the rest of the peanuts and microwave them and cool them completely.

8. Store the peanuts in an air tight container and serve them with a cup of tea/coffee.


Notes:
1. Microwave in small batches for even cooking.
2. Timing for microwave depends upon power of microwave. It might take any time in between 2-4 minutes.
3. Instead of microwave can bake in oven for 5-10 minutes at 350F.
