Minty minced Chicken Kababs

Chicken kababs!!! hmmm.. garlicky, minty yummy chicken kababs...slurp!!
Yeah you too can cook it at home; no excuse like don't have oven, don't know how to mince chicken etc etc. Here is quick super easy recipe. You can replace chicken with any other meat, cooking time may vary accordingly. 


For vegeterian or vegan recipe, chicken can be easly replace with soaked chickpeas and or fava beans(will taste like falafel) or tofu and add 1 tbsp of corn flour instead of egg white as binding agent rest of procedure is same.

Time: approx. 15,
Serve: cooking time 20 minutes + resting tim1/2 hr

Ingredients:

1 lb chicken breast(chopped into cubed)
1 egg white
1 tbsp lemon juice
1 tbsp olive oil
1/2 cup fresh mint(finely chopped)
-more or less 
4-5 garlic cloves(chopped)
1 inch fresh ginger(thinly sliced)
2 small green chilies(chopped) to taste
1 tsp cumin seeds
1 tbsp cumin seeds powder
1 tsp red chili powder
oil to shallow fry(about 2Tbsp)

salt to taste 
 


Method:

1. In Food Processor, add all ingredients except oil to shallow fry. Mince till desired consistency. Do not over process otherwise ending up with chicken puree. Allow it to rest for at least half an hour.(see note 1)

2. Divide mixture into small handfuls portions and make into small kabab(sausage) shapes.

3. Heat oil in a large non stick pan on medium heat. Shallow fry the kababs for 10-15 minutes, turning them occasionally till cooked through.

4. Serve hot with any chutney or with salad or as an appetizer/starter or with roti/nan variety of bread or even with variety of rice.

Note:
1. This mixture can be prepared a day before making kababs. Any other meat can be replaced with chicken. Cooking time will vary accordingly.
2. These kababs may be baked in the oven at about 350 F for 25 minutes or until the inside is cooked through and the outside is browned, tuning them around and basting with oil a few times. Also may be grilled and deep fried.
