Amrakhand ~ Mango Infused Yoghurt Dessert ~ Happy Gudi Padwa !!
Happy Gudi Padwa !!! Gudi Padva is the first day of Chaitra(first month) in the Marathi Hindu Calendar. As a offering I made Amrakhand. Amrakhand is simply Shrikhand blended with mango pulp.
Shrikhand is a very popular Indian dessert made from strained yogurt, sugar and some dry fruits. This exotic Dessert is super simple to prepare and much healthier than other sugar coated Sweets.
Here I used store bought mango pulp. Fresh and ripe mangoes can also be used to make Amrakhand. For flavoring can add some cardamom powder, saffron(not used here), nutmeg powder(not used here) and dry fruits.

Solkadhi(Coconut And Kokum Drink)
Solkadhi is a type of appetizer drink usually had with rice or sometimes drunk after the meals. Popular in the Konkan region of India, it is made from coconut milk and kokum. It's known for it digestive properties.
This recipe is easy and all you have to make is coconut milk, dry kokam or kokam agal(ready made kokam juice), garlic, chilies and water. Soak Kokam for 30 minutes in water, squeeze nicely and will get a beautiful pinkish red colored kokum extract. Mix all together, refrigerate and its ready.

Gujarati Methi Muthia
Methi muthia are steamed or fried dumplings made from chickpea flour and fenugreek leaves/methi. There are various ways of making muthia, mainly many people do with chickpea flour only, but can replace or add with whole wheat flour, bajra (pearl millet) or jowar (sorghum) flour.
Methi muthia is great for snack, goes very well with tea/ coffee make it fried, tempered or steamed your choice. Steamed muthias can be made in advance and then added to any veggie dish you make, like in gujarat they add it to undhiyu.

Delicious Pistachio Falooda / Faluda
Basic falooda can be made with just Five ingredients – soaked sabja seeds, rose syrup or rooh afza, falooda noodles (these are vermicelli made from corn starch), chilled milk and scoop of vanilla ice-cream. there is no need to add any sugar as the sweetness of the rose syrup is enough to make the falooda sweet.
Pistachio falooda has same ingredients just instead of rose syrup, I used pistachio nuts. Soaked and grind into smooth paste. This falooda taste authentic with pistachio ice-cream on top.

Oatmeal Cookies
These are delicious and easy to follow oatmeal cookies. Original cookie recipe has all purpose flour and white sugar in it. I replaced it with half of all purpose flour, half of oats flour and brown sugar. You can make these cookies in variation by adding different nuts, protein powder etc. Also can use different flours to make it multi grain oatmeal cookies. Enjoy :-)
