Rich Eggless Cake

If you have one bite of this cake I bet you will want to finish it off. Its so good and melt in mouth delicious cake I ever had. This is very simple to bake and result will be rich spongy cake.  Recipe courtesy : My Gorgeous Friend Megha Gupta.

Time: 1 hour
Serve: 4

1 cup all purpose flour/maida
1 cup milk powder
1 cup sugar

1 cup milk
1 cup ghee(Clarified butter)(I used 1/2 cup)
1/2 tsp baking powder
1/4 tsp baking soda 
1/2 cup raisins


1. Preheat the oven to 350°F.

2. Mix the dry ingredients all purpose flour or maida, milk powder, baking powder, baking soda.

3. In another bowl, take sugar, milk and ghee(Clarified butter)Whisk until all sugar dissolve completely for about 2 minutes.

4. Now slowly add dry ingredients and stir until it becomes a smooth batter.

5. Gently fold raisins into batter and pour the batter in a greased pan.

6. Bake cake batter for 40-50 minutes or until toothpick inserted comes out clean.

7. Let it cool completely, slice the cake and serve. 

1. In place of raisins you can also use nuts like almonds, walnuts or blue berries, cherries, strawberries etc.
2. All purpose flour can be replaced with semolina or sooji.
