Shankarpali is a snack speacially made in Diwali festival and popular in Maharashtra, India. Its very easy to make and has good shelf life. It goes well as tea time snack.
Have a very Happy safe and prosperous Diwali.
Time: Preparation time 10 minutes + Cooking time 20 minutes
Serve: 2-3 dozen delicious bites (depending on cutting size)
Ingredient:
1/4 cup clarifed butter(ghee) or plain butter
1/4 cup sugar
1/4 milk
1 tsp Semolina(soji)

1 tsp Semolina(soji)
1 1/2 cup all purpose flour
Oil/ghee for frying
pinch of salt
2. Add sugar to the milk and ghee mixture and stir well. Now add semolina and mix well.
3. Once sugar-milk mixture cools down, add all purpose flour. Knead the dough to make medium consistency dough. Cover and let the dough rest for 30 minutes.
4. Make small balls from the dough and roll like thick paratha.
6. Now cut in to desired shape possibly diamond. Deep fry until light golden brown color.
7. Once completely cools down, store in air tight container or zip lock bag.

1. While making dough proportion of All purpose flour may vary.

2. Roll dough little bit thicker for crunchy crispy shankarpali bites.
3. I used simple pizza cutter, different designer cutter can be used to give design on edge of shakarpali bites.
4. Semolina adds crispiness, addition of it is optional but I recommend it.
