These are delicious and easy to follow oatmeal cookies. Original cookie recipe has all purpose flour and white sugar in it. I replaced it with half of all purpose flour, half of oats flour and brown sugar. You can make these cookies in variation by adding different nuts, protein powder etc. Also can use different flours to make it multi grain oatmeal cookies. Enjoy :-)
Time: 20 minutes
Yield: 3 - 4 Dozen(Depending on size)
Ingredients:
3 cups Oats(Uncooked Quick or Old Fashioned)
3/4 cup All Purpose Flour
3/4 cup Oats Flour/Whole Wheat Flour
1/2 cup Butter(unsalted,softened)
1 cup Brown Sugar
1 cup Walnuts, Almonds(chopped)
1/4 cup Small Dark Chocolate Chips(optional)
2 Eggs
1 tsp Baking Soda
1/2 tsp Rose Water(or Vanilla Essence)
1/2 tsp Salt
Method:
1. Preheat oven to 350F.
2. Beat butter and sugar on medium speed of electric mixer until creamy.
3. Add eggs and rose water(or vanilla essence). Beat well.
4. Add oats flour(or whole wheat flour), all purpose flour, baking soda and salt. Mix well with spatula.
5. Add oats, walnut and almonds. Mix well with spatula.
6. Drop dough by rounded tablespoonful onto ungreased cookie sheets.
7. Bake 10-15 minutes or until light golden brown.
8. Cool 2 minutes on cookie sheets, remove to wire rack.
9. Cool completely and store in air tight container. Enjoy :)
Notes:
1. Can replace with just raisin to make raisin oatmeal cookie.
2. Can skip all purpose flour completely and use Oats flour and whole wheat flour for more healthy cookies.
3. Can add protein powder to make it protein rich cookies.
