Solkadhi is a type of appetizer drink usually had with rice or sometimes drunk after the meals. Popular in the Konkan region of India, it is made from coconut milk and kokum. It's known for it digestive properties.
This recipe is easy and all you have to make is coconut milk, dry kokam or kokam agal(ready made kokam juice), garlic, chilies and water. Soak Kokam for 30 minutes in water, squeeze nicely and will get a beautiful pinkish red colored kokum extract. Mix all together, refrigerate and its ready.

10 dry kokam(Garcinia indica)

Method:
1. Soak kokam in hot water for 20 minutes. Squeeze kokam nicely so it releases all its juice.
2. Grind grated coconut with hot water, garlic and chilies.
3. Strain the coconut milk mixture. You can grind coconut mixture again to give thin consistency to solkadhi.
4. In pitcher mix coconut milk, sugar and kokam juice. Give it taste if required add salt. Refrigerate.

Note:
1. Instead of fresh coconut coconut milk can/tin can be used.
2. Can use kokam aagal.
3. Leftover solkadhi should be kept in the fridge as coconut milk will get spoiled in the hot weather, hence refrigerate the solkadhi.
