I got few fresh zucchini few days ago. So, I started searching for recipes, I came across so many recipes basically many of them are to bake muffin or cake using zucchini. I like the concept of using zucchini in baking. But I wanted to make quick without baking.
So, I decided this recipe, is from Barefoot Contessa show, I replaced All purpose flour with whole wheat flour and it turned out delicious healthier version.
You love zucchini or hate it, make it using this method, you gonna love your veggie. Trust me :)
Time: 10 minutes
Serve: 8-10 small pancakes
Ingredients:
3/4 cup zucchini(grated)
1/4 cup sprouted whole moong(moong bean)
1 large egg
2 tbsp whole wheat flour
2 tbsp onion(finely minced)
1/2 tsp baking powder
1/2 tsp black pepper powder
1/4 tsp turmeric powder
1 tbsp garam masala
1 tbsp oil
salt to taste
Method:
1. In bowl, add egg, whisk to mix egg white and yolk.
2. In another bowl, add grated zucchini, sprouted whole moong, whole wheat flour, onion, baking powder, black pepper, turmeric powder, garam masala and salt. Mix well to from pouring consistency pancake batter.
3. Heat non stick pan, add oil. Once oil is hot, pour spoonful of batter into desired shape. Let it cook on both side until crispy for 3-4 minutes each side.
4. Serve hot.
Notes:
1. Add any choice of vegetable to make it more healthier.
