Shrimp Biryani



When cooking shrimp you have to be really careful not to overcook or else they get rubbery. As soon as the shrimp turns pink it should be removed from the stove. This is easy delicious meal.


Time: 15 minutes.
Serve: 4


Ingredient:


1-1/2 cups basmati rice, cleaned
1lb shrimp, cleaned
1 onion(chopped)
2 tomatoes(chopped)
2 garlic cloves
2 tbsp garlic(grated)
1 inch piece ginger(grated)
3 red chilies(or green)

1/2 tsp turmeric powder
1 tbsp garam masala
1 tbsp red chili powder(adjust to taste)
2 bay leaves
2 cinnamon sticks
4 green cardamom pods, bruised

1 tbsp lemon juice
3 tbsp olive oil
salt to taste




Method:
1. Heat deep pot on high heat, add basmati rice and water and cook rice until 90% cook. Do not overcook.


2. Marinate shrimp in salt, turmeric, 1 tbsp garlic and lemon juice for 1/2 hr. Now in non stick pan, saute shrimp for few minutes until pink in color. Keep aside.


3. In same non stick pan, add 1 tbsp of oil. Once hot add onion, saute till onions are transparent and soft. Keep onions aside. Now, add tomatoes, saute for few  minute till soft. Keep aside to cool.


4. In a food processor or blender, grind onion, tomatoes, garlic and ginger until smooth paste. 


5. Heat same pan, add 1 tbsp oil, add bay leaves, cinnamon stick, cardamon pods, red chilies and saute it. Now add onion mixture, turmeric powder, red chili powder, garam masala. Mix well.

6. Add cooked rice and sauteed shrimp. Mix well. Reduce heat to low, cover with lid and cook for anothe 10 minutes.

7. Once rice is cooked garnish with fried onion and serve hot.
