Gobi Masala(Cauliflower Curry)





I had cauliflower sitting in my fridge for last few days. Many recipes came in my mind. At last I decided to do Gobi masala as its quick and easy can be prepared on any busy week day. And it goes well with rice as well as chapattis.


Time: 10 minutes
Serve: 2


Ingredients:


2 Cup cauliflower florets
1 onion(finely chopped)
1 tomato(finely chopped)
1 tsp fresh garlic(minced)
1/4 tsp turmeric powder
1 tsp red chilli powder
1 tsp coriander seeds powder
1 tsp garam masala
1 tbsp jaggary(or brown sugar)

1 tsp fennel seeds(crushed/ powder)(optional)
1 tbsp roasted peanut powder
Salt to taste


For tadka:
1 tbsp Olive Oil
1 tsp cumin seeds
1 tsp mustard seeds
4-5 curry leaves




Method:


1. Heat oil in a non stick pan, once hot add musturd seeds, cumin seeds, curry leaves. 
2. Once splatter add minced garlic, onions, saute till it turns slighlty browned. Then add tomato, cook until smooth pressing back of spatula.


3.Now add turmeric powder, red chilli powder, garam masala, coriander seeds powder, salt and jaggary. Mix well.


4. At this point add cauliflower florets, saute for 2 mintues. Lower the heat and cover. Let it cook for 5 minutes or less till juices are coming from cauliflower florets at about 60% cooked.


5. Now add crushed fennel seeds, roasted peanut powder, mix and saute for few minute.


6. Turn off the heat. Garnish with finely chopped coriander leaves. Serve hot with any variety rice, chapati or roti.
