Delicious Pistachio Falooda / Faluda

Basic falooda can be made with just Five ingredients – soaked sabja seeds, rose syrup or rooh afza, falooda noodles (these are vermicelli made from corn starch), chilled milk and scoop of vanilla ice-cream. there is no need to add any sugar as the sweetness of the rose syrup is enough to make the falooda sweet. 

Pistachio falooda has same ingredients just instead of rose syrup, I used pistachio nuts. Soaked and grind into smooth paste. This falooda taste authentic with pistachio ice-cream on top.





Time: 15 minute cooking + 30 minutes soaking + 2 hr chilling time
Yield: 4 small glass/2 big glass

Ingredients: 

2 cup Milk(preferably whole milk)
5-8 tbsp Sugar
25-30 Pistachios(without shell - for making paste)
2 drops Pistachio Essence(optional)
4 drops Green Color(optional)
1/2 cup Falooda Noodles / Rice Noodles(or more)
2 tsp Basil Seeds(Tukmaria/Sabja seeds/Falooda Seeds)
3-4 tbsp Pistachio or any other Nuts(chopped)
2 tbsp Green Raisins
few scoops Pistachio Ice-Cream
Strawberry flavored Jelly Package(any other flavor)





Method:

1. 
Soak the tukmaria seeds/basil seeds in enough water for about 30 mins. When they swell up, drain them and keep aside.

2. Soak pistachio in water for 30 minutes. After soaking, remove pistachio cover.(This is important step dont skip it)

3. Grind pistachios to fine smooth paste with 1/4 cup of water.

4. Pour milk into thick bottom pot and start boiling it. 

5. Add falooda noodles, sugar, pistachio paste, chopped pistachio or any other nuts, green raisins, soaked basil seeds or tukmaria, pistachio essence and green color one by one.

6. Boil milk for 5-10 minutes. Continuously stir to avoid any burns.

7. Let it cool down and Keep in the refrigerator for 2 hours or more. I recommend keep in refrigerator few more hours for awesome taste. 

8. Follow Jelly package instruction to make Jelly. Keep in refrigerator.

9. While Serving, add 1-2 tbsp Jelly in glass. Stir falooda milk well and gently pour falooda milk into glass.

10. Now slowly add a scoop of Pistachios ice-cream. Topped with nuts.

11. Enjoy the chilled falooda. Once You have this, will never order in restaurants. :)

                       

Note:
1. If you want small falooda noodle pieces in your falooda then cut falooda noodles. Cut them inside plastic bag using scissors otherwise it will scatter everywhere.
2. Increase the quantity of falooda noodle if required.
3. Thickness of milk depends upon individual taste so add extra milk accordingly.
4. Vanilla ice-cream can be used instead of pistachio ice-cream but pistachio ice-cream gives more authentic taste.
