Eggless Banana Bread with Chia Seeds

Banana bread is an all time favorite and I made this bread with over ripe bananas. This bread is also eggless and added chia seeds to increase its nutrition value.




Time: 1 hr
Serve: 6-7

Ingredients:
4 Bananas(ripe or over ripe medium size)
1 tbsp Chia Seeds
1/4 cup Water( to soak chia seeds)
1.5 cups Whole Wheat Flour
1/4 cup Clarified Butter(or coconut oil or sunflower oil or any vegetable oil)
1/4 cup Brown Sugar(or regular granulated sugar)
1 tsp Vanilla Extract
1.5 tsp Baking Powder
1/2 tsp Baking Soda
1 tbsp Sunflower Seeds(optional)
1 tbsp Oats(optional)
a pinch of salt(optional)



Method:

1. Preheat the oven to 350 Fahrenheit.

2. In blender, grind chia seeds to powder add water. Keep aside until chia seeds powder to swell up for about 5 minutes.

3. Grease a loaf pan or a rectangular cake pan with some oil or clarified butter.

4. In Deep bowl, add banana, sugar. Mash the bananas well or puree them with a hand blender.

5. Now add the oil, vanilla to the banana and mix well.

6. Sieve whole wheat flour, baking soda, baking powder and salt into in the bowl.

7. Fold flour really well for about 2-3 minutes until all lumps are gone and evenly mixed.

8. Pour bread mixture into the loaf pan.

9. Top up with oats and sunflower seeds evenly.

10. Bake for 40-50 minutes or till a toothpick inserted in the bread comes out clean.

11. Remove from pan once cooled. Slice and Serve.
