Kandi Pedha / Milk Pedha

Today on the occasion of RakshaBandhan or Rakhi Poornima, I made this super quick sweet Kandhi Pedha. Mainly only there ingredients are required milk powder, evaporated milk and sugar(I used trivia). 




The method is super quick and takes about only 5 minutes to cook in the microwave oven. Very important point is, when you microwave the milk pedas, keep an eye so that the mixture does not get overcooked. you can also cook the whole mixture in a pan instead of the microwave.

Yeild : 14 - 16 pedas.
Time: 15 mins

Ingredients:

1 cup evaporated milk 
½ tbsp ghee or butter
2 packets of trivia(or 2-4 tbsp of sugar)
1 cup milk powder
a pinch of saffron/kesar
a pinch of nutmeg powder
1/4 tsp green cardamom powder
few pistachio for garnishing




Method:
1. Mix the evaporated milk, milk powder, trivia and ghee/butter in a microwave safe bowl, make sure there are no lumps.

2. Cook in microwave on high for one minute.

3. Add the cardamom powder, nutmeg powder and saffron strands. Stir vigorously. 


4. Again microwave on high for one minute. remove and stir again. Repeat this process total of 2-4 minute until right consistency.


5. When the mixture becomes mildly hot or warm, apply some oil or ghee on palm of hand and shape into small balls.

6. Garnish with chopped strands of pistachio or whole one.

7. Cool it and Serve.

8. Store the pedas in an air tight box in the refrigerator.



Notes:
1. Since the microwave cooking functions vary from oven to oven, you can microwave some seconds less or more to get the right consistency.

2. the mixture can also be cooked in a pan. cook the mixture till it starts to leave the sides of the pan. it takes approx 10-14 minutes depending on the type of pan, amount of heat and quantity of the mixture.
