Eggless Fat-free Date Cake(Pressure Cooker Cake)


My maternal aunt makes a wonderful delicious pressure cooker cakes specially tutti frutti cake(with eggs - recipe coming soon). She is lives in a small but upscale village in India. We used to visit aunt's place in almost all of our school vacations, relish amazing foods prepared by aunt and fresh organic cows milk and eggs (as she owns about 3-4 cows, 2-3 goats and few chickens). There is different joy to live in such a sound village. Fresh farms, nice and clean air, just like heaven.



As in village, she don't have oven but still she used to bake cake for us. I used her method to bake cake and recipe is adapted from here.  I skipped oil and used fat free milk and turn out guilt free drooling fat free tutti frutti cake. This cake recipe is just two to three steps but the result is delicious cake.  You can bake this cake in oven at 350F for 35-40 minutes till the toothpick inserted comes out clean.

Tutti frutti is basically an Italian confection made with sliced fruit which has been candied or dried to preserve it. In Italian, “tutti frutti” means “all fruit, where a varied fruits like pineapple, papaya, mango, apricot, and grapefruit are used.All of the fruits are diced fairly small and often brightly colored with various dyes to make it more visually appealing.

Serve: 4

Ingredients:

20 seedless dates
1 cup fat free milk
1/2 cup sugar
1 cup all purpose flour
1 tsp baking soda
1/2 cup tutti frutti

Method:

1. Grease and flour pan(or container) comes with pressure cooker or any aluminum baking pan.(use 6 inch diameter, so that it can easily get into the pressure cooker). Or place parchment/ wax paper on the bottom of the pan.

2. In microwave safe bowl, heat milk and dates for few minutes.

3. Grind soaked dates, sugar with milk to smooth paste.

4. Sieve together all purpose flour and baking soda. Add the flour one tbsp at a time and mix slowly. Add tutti frutti and gently fold into batter.

5. Pour into the prepared pan. Gently tap the pan on the kitchen counter once to release any air bubbles.

6. Preheat pressure cooker for 2 minutes without whistle.

7. Remove the pressure cooker lid and place a separator at the bottom of the pressure cooker. Do not add water. Using tongs, place the pan containing cake batter into the pressure cooker. Close lid. Cook for 2 minutes on high heat.

8. Reduce heat to low and cook for 40 mts. Turn off heat. Do not open the lid for 5 minutes.

9. After 5 minutes remove the pressure cooker lid and carefully remove the pan and cool the cake for 15 minutes. Overturn the cake onto a plate and slice.

Note:
1. Do not add water while baking cake.
2. This cake taste good with ice cream.

    1. Its totally optional, You can add 2-4 tbsp of ghee or butter as per your choice.

  3. can we use aluminium tin or bowl to bake cake on convection mode in microwave?

  4. Don't use aluminium tin or bowl,as it conduct electricity. Use bowls specially said oven safe.
