Instant Oats Upma


Babies or kids makes us happy just by looking at them, even looking at their snaps. They so cute, pure, full of energy, joy and innocence, its shows in their activities, answers, talks. Truly blessing. I learn so much from my baby 'Avanish' from his activites, way of thinking, don't give up attitude, love, kindness, appreciation, and caring. He is the best thing ever happened to me.

Its already 1pm and today am bored with eating same roti curry routine. I am eagerly wanted to cook something that is easy yet delicious and mostly quick. I decided to cook instant oats upma for me and Avanish so added only 1 chili. 
This upma is smooth creamy and Avanish also loved it. Feeding the baby is big job, and its well done very easily today. 

Time: 10 mintues
Serve: 2

Ingredient:
1 cup oats( semolina/Suji)
1/2 cup peas(fresh/frozen)
1 onion (finely chopped)
1/2 tsp turmeric powder
3 green chilies(chopped) 
1 tsp cumin seeds
1 tsp mustard seeds 
A few curry leaves
1/4 cup peanuts
1 tsp Olive oil
lemon wedges
Coriander leaves(finely chopped), for garnish 
Salt to taste
2 cups water

Method:

1. Dry roast the oats in a deep non stick pan until it turns a light brown about 2-3 minutes. Transfer to a bowl when done and keep aside to cool.

2. Heat oil in the same pan, add cumin seeds, mustard seeds allow them to splutter then curry leaves, green chilies and peanuts. Saute for few minutes.

3. Add the onions, saute till onions turns golden brown. Now add salt, turmeric powder, peas and roasted oats and mix well. 

4. Turn the heat low. Add about 2 cups of water. Stir continuously to avoid lumps. Cover with lid.

5. Cook for about 10 minutes stirring occasionally. Cook till desired consistency of upma(dry or smooth). 

6. Garnish with coriader leaves.

7. Serve hot with lemon/lime wedges.

Note:
1. Always dry roast oats before making upma to avoid becoming lumpy.
2. Potatoes, tomatoes, broccoli also carrots taste good in upma.
