Oatmeal Patty Veggie Sandwich

I am always looking for healthy delicious option to indulge. Oat is one of it. Oatmeal is high in soluble fiber it lowers bad cholesterol, as it digest slowly feels full for longer time enhancing fitness, also it stabilize blood sugar so very good for diabetic people. 

Their are variety of snacks available like oatmeal cereals, oatmeal cookies, oatmeal bar. Homemade are just homemade, so thought of making something with oat for breakfast or brunch. Oatmeal patty veggie sandwich is club sandwich with homemade oat patty with your choice of veggie slices and cheese. Have a delicious crunchy oatmeal patty sandwich on your plate.

Serve: 2

4 whole wheat bread slice
2 fat free cheese slices 
few thin slice of tomato 
few thin slice of onion
few lettuce leaves
2 tbsp coriander/ mint chutney
2 tbsp tomato kechup/hot sauce
1 tsp Olive oil

1/2 Cup instant oat
2 tsp chickpeas flour
1/4 Cup water (or little less)
1 small tomato(finely chopped)
1 small onion(finely chopped)
1-2 green chilies (as per taste)
1 tsp coriander leaves (chopped)
1 tsp red chili powder
1 tsp each cumin - coriander seeds powder
salt to taste

1. Soak instant oat with half of the water for a min. Add all ingredient listed in patty(tikki) section. Mix well if required add remaining water little by little. Make small patties as in picture or big about size of bread. 

2. Heat non stick pan, drizzle oil, roast patties each side till golden brown and crispy.  

3. Toast bread in toaster or non stick pan. Apply coriander/ mint chutney on one bread and tomato kechup/hot sauce on second slice. Place tomato slice, onion slice, lettuce leaf and cheese slice on one bread with chutney. Wrap with other bread.  

4. Serve hot with side dish like hot cuppa tea, potato wedges, soups, salads even with variety of rice.

1. Light mayonnaise or sour cream can be used instead of cheese slice.
