Coleslaw Sandwich

This Coleslaw sandwich is super easy and healthy recipe if used with moderate amount of mayonnaise. To make it as full meal I used burger in sandwich which is totally optional. Coleslaw can be eaten as salad.


Time: 15 min
Serve: 2

Ingredients:


1 cup cabbage (finely shredded)
1/2 cup capsicum (thinly sliced)
1/2 cup carrot(finely shredded)
2 tbsp eggless mayonnaise(I prefer eggless)
1 tbsp chili sauce(I used Maggi Sweet Tomato Chili Sauce)(optional)
veggie burger/cutlet(I used Trader Joe's Vegetable Masala Burger with Indian spices)(optional)
4 whole wheat bread slices
1 tsp black pepper powder
salt to taste

Method:

1. In a large bowl, combine cabbage, carrots, capsicum, mayonnaise, chili sauce, salt and pepper. Toss mixture and chill in refrigerator for 5 minutes. 

2. This Coleslaw mixture, you can serve as it is as salad in family style bowl.

3. For sandwich, use homemade burger or ready-made one. Nicely cook burgers as per packet instructions. 

4. Put some coleslaw mixture on one bread slice, top it with burger and again put little coleslaw. Cover it with other bread slice.

5. Remove sandwich edges and cut into half and serve.


Note:
1. Veggie Burger is optional you can avoid it or replace with burger of your choice.
2. Amount of mayonnaise depends on personal choice but be careful as over the time more mayonnaise may make bread soggy. Put salt accordingly as mayonnaise has added salt in it.
