Double Chocolate Muffins With Cream Cheese Frosting




Everyone loves chocolate and those one saying they don't like are always lying. For all chocolate lovers :)



I always loved chocolate while growing up. Here is I made Double Chocolate Muffins With easy Cream Cheese Frosting. 

Here are some tips while baking Muffins:

1. All ingredients should be at room temperature even the egg.
2. Do not over mix the batter use rubber spatula specially adding fresh fruits like blueberry.
3. Always well grease muffin cups or use muffin liner for easy removal of muffin.
4. Don't over fill the muffin cups otherwise ended up with lots of spill after baking as because of baking powder it has tenancy to rise while baking.
5. Lay down baking sheet down the muffin cup for easy clean up if spilling occurs.
6. Allow them to cool for at least 10 minutes before you remove muffin.




Sending these Double Chocolate Muffins With Cream Cheese Frosting to my first food event-Bake Delicious Muffin of this month(April 2012).


Time: 25 minutes
Serve: 10 muffins

Ingredients:

1 1/2 cups all purpose flour
3/4 cup sugar
2 tsp baking powder
1/4 tsp salt
1/4 tsp cinnamon powder
1 large egg
3/4 cup milk
2/3 cup vegetable oil(I used olive oil)
1 tsp vanilla extract
3/4 cup mini chocolate chips(see note 1)

Method:


1. Preheat oven to 375°F. Lightly grease or line muffin liners.

2. In big bowl, add all purpose flour, sugar, baking powder, baking soda, salt, cinnamon powder. Mix well. Combine gently with the chocolate chips.

3. In another deep bowl, add egg, milk, oil and vanilla. Wish until well blended and pluffy.

4. Using a rubber spatula or a wooden spoon, stir and fold the wet ingredients into the dry ingredients just until all of the dry ingredients are moistened and the batter is well blended and smooth. Do not over mix.

5. Fill each muffin cup 3/4 full and bake for about 20 minutes or until the muffins are puffed, golden and toothpick inserted into the center of a muffin comes out clean.

6. Remove the muffins from the oven allow it to cool for 10 minutes and carefully lift each muffin out of the tin and allow to cool completely on a rack.



Cream Cheese Frosting:


Ingredients :
1/2 cup
(4oz) unsalted butter, at room temperature
1/2 cup(4oz) cream cheese, at room temperature
2 cups powdered sugar
1 teaspoon vanilla extract 



Method:

1. In a large bowl, beat together the butter and cream cheese with an electric hand mixer. A
dd vanilla extract and blend again.


2. On low speed, add powdered sugar a cup at a time until smooth and creamy.(see note 2)


Note:
1. If serving muffin with frosting then use dark chocolate chips otherwise use semisweet.
2. If just want to spread on muffin like I did, stop adding powdered sugar once it reach spreadable quantity. If want to make decorative design using frosting then add powdered sugar till bit thick, smooth creamy consistency.
